If there were a competition for the most beautiful cheese, Cornish Yarg would claim the title. Each cheese is wrapped in wild stinging nettles, which are brushed on by hand one by one. With aging, the nettles form a natural rind around the cheese, giving it a fresh, creamy taste with hints of herbs, mushrooms, seaweed, and even lemon. So how did this recipe even come about? It was actually found randomly in a book about 400 years ago. We visited Lynher Dairies in the heart of Cornwall to find out more.
